Instructions

  1. Prepare the zucchini: Shred the zucchini using a cheese grater. Use the smallest holes on a box grater for a smooth texture or larger holes for chunkier zucchini pieces. Measure out about 1 cup of packed shredded zucchini.
  2. Remove excess moisture: Squeeze out as much moisture as possible from the shredded zucchini using your hands or a clean towel. Alternatively, place the zucchini on a sieve and press down with the back of a spoon to extract liquid. After this, you should have a little over ½ cup of packed zucchini.
  3. Mix the batter: In a bowl, combine the squeezed zucchini with shredded cheese, parmesan, flour, egg, and optionally salt and pepper. Mix thoroughly until the batter comes together into a thick, well-combined mixture.
  4. Cook the waffles: Preheat your waffle iron. Pour a thin layer of batter onto the iron and cook according to your waffle maker’s instructions, approximately 3 minutes per waffle for a mini waffle maker, until they are golden brown and cooked through.
