Ingredients

Vegetables

  • 1 medium zucchini, ends trimmed and sliced into large chunks
  • 4 plum tomatoes, quartered
  • 1 small onion, quartered
  • 1 jalapeno pepper, stem, seeds, and membranes removed
  • 2 garlic cloves

Herbs & Spices

  • 1/4 cup fresh cilantro
  • 1/2 teaspoon chili powder
  • 1/4 teaspoon cumin
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper

Other

  • 2 tablespoons lime juice (juice of 1 lime)

Instructions

  1. Prepare Ingredients: Trim the ends of the zucchini and slice it into large chunks. Quarter the plum tomatoes and the small onion. Remove the stem, seeds, and membranes from the jalapeno pepper. Peel the garlic cloves.
  2. Add to Food Processor: Place the zucchini, tomatoes, onion, jalapeno, garlic, fresh cilantro, lime juice, chili powder, salt, cumin, and pepper into the bowl of a large food processor.
  3. Pulse to Desired Consistency: Pulse the mixture in short 1-second bursts, monitoring the texture until the salsa reaches your preferred consistency—chunky or smooth.
  4. Serve: Transfer the zucchini salsa to a serving bowl and enjoy it fresh with tortilla chips or as a topping on your favorite dishes.
