Ingredients

Filling

  • 1 lb ground beef (we used wagyu beef)
  • 4 green onions, diced
  • 1 tbsp fresh ginger, grated
  • 2 cloves garlic, minced
  • 2 tbsp oyster sauce
  • 2 tbsp soy sauce
  • 1/2 tsp salt
  • 1/4 tsp white pepper
  • 1/2 tsp sugar
  • 2 tbsp sesame oil
  • 1 tbsp cornstarch

Assembly

  • 18 wonton wrappers, thawed

Garnish

  • 1 tbsp chili oil
  • 1 tbsp soy sauce
  • Sprinkle of sesame seeds
  • Sprinkle of diced green onions

Instructions

  1. Prepare the filling: In a large bowl, combine the ground wagyu beef, diced green onions, grated fresh ginger, minced garlic, oyster sauce, soy sauce, salt, white pepper, sugar, sesame oil, and cornstarch. Mix thoroughly but gently to evenly incorporate all ingredients without overworking the meat.
  2. Heat the skillet: Place a large nonstick skillet with a lid over medium heat and add a small amount of sesame oil, allowing it to warm up for cooking the dumplings.
  3. Form the meatballs: Using a cookie scoop or spoon, portion the meat mixture into evenly sized balls and place them directly into the heated skillet.
  4. Apply wonton wrappers: Gently lay one wonton wrapper on top of each meatball, pressing lightly against the sides to create the characteristic wonton blanket appearance that covers the meat.
  5. Steam the dumplings: Pour 1/2 cup of water around the dumplings in the skillet, being careful not to disturb the wrappers. Quickly cover the skillet with the lid to trap the steam, and cook the dumplings for 5-7 minutes over medium heat.
  6. Check doneness: Watch for the water to fully evaporate; the wonton wrappers should turn translucent and the meatballs should feel firm when gently pressed. If needed, cook a few more minutes to ensure the centers are thoroughly cooked.
  7. Serve garnished: Carefully transfer the dumplings to a serving plate. Drizzle with soy sauce and chili oil, then sprinkle sesame seeds and extra diced green onions on top for added flavor and visual appeal.

Notes

  • Make sure to not overwork the meat mixture to keep the filling tender and juicy.
  • If you prefer a spicier dish, increase the amount of chili oil for garnish or serve with extra on the side.
  • Use a nonstick skillet with a tight-fitting lid to ensure proper steaming without drying out the dumplings.
  • These dumplings can be made ahead and reheated gently by steaming again or microwaving with a damp paper towel to maintain moisture.
  • Substitute ground wagyu beef with high-quality ground beef or pork if desired.
