These Viral Chickpea Truffles are a simple and delicious treat made with just three main ingredients—chickpeas, nut or seed butter, and vegan dark chocolate. Coated in a rich layer of melted vegan chocolate and customizable with various toppings, these truffles are perfect for a healthy, no-bake dessert that’s easy to make and enjoy anytime.

  • 1 (13.5 oz) can chickpeas, drained and rinsed
  • 1/2 cup nut or seed butter (almond or cashew butter recommended)
  • 1 cup vegan dark chocolate chips, melted

For Coating

  • 1 cup vegan dark chocolate chips, melted
  • 1 tbsp coconut oil

  • Cacao nibs
  • Goji berries
  • Sprinkles
  • Shredded coconut
  • Nuts/seeds
  • Freeze-dried fruits

Instructions

  1. Drain and rinse chickpeas: Start by draining the canned chickpeas and rinsing them thoroughly under cold water to remove excess sodium and canning liquid.
  2. Melt chocolate: Melt 1 cup of vegan dark chocolate chips either in the microwave or using a double boiler on the stovetop until smooth and fully melted.
  3. Blend ingredients: Add the drained chickpeas, nut or seed butter, and melted chocolate chips into a food processor or blender. Blend for about 45-60 seconds until the mixture is smooth and well combined.
  4. Scoop and freeze: Using a cookie scoop, portion the mixture onto a baking sheet lined with parchment paper. Freeze the scooped balls for 15-20 minutes until firm enough to handle.
  5. Roll into balls: Remove the mixture from the freezer and roll each portion into a smooth ball. Return the balls to the freezer for an additional 10 minutes to harden.
  6. Prepare coating chocolate: Melt the remaining 1 cup of vegan dark chocolate chips with 1 tablespoon of coconut oil until smooth for dipping the truffles.
  7. Coat truffles: Remove the truffles from the freezer and coat each one thoroughly with the melted chocolate. Optionally, sprinkle your choice of toppings (cacao nibs, goji berries, shredded coconut, etc.) on the coated truffles while the chocolate is still wet.
  8. Final freeze: Place the coated truffles back onto the parchment-lined baking sheet and freeze again until the chocolate coating hardens completely, about 10-15 minutes.
  9. Storage and serving: Store the truffles in the refrigerator for 7-10 days or in the freezer for 30-60 days. Remove from the freezer or fridge a few minutes before serving to enjoy the perfect texture.

  • Ensure the chickpeas are well rinsed to reduce sodium and prevent any canned taste.
  • You can use any nut or seed butter you prefer; almond or cashew butter gives a mild and creamy flavor.
