This vibrant Vermicelli Noodles Stir-Fry is a quick and flavorful plant-based dish packed with fresh vegetables and a savory BBQ sauce. Perfect for a light yet satisfying meal, it combines tender vermicelli noodles with shiitake mushrooms, crunchy broccoli, carrot, red bell pepper, and cabbage, all tossed in fragrant sesame oil, garlic, and ginger.

Ingredients

Main Ingredients

  • 7 oz vermicelli noodles
  • 2 tsp sesame oil
  • 1/2 heaped Tbsp fresh ginger, grated
  • 2 cloves garlic, minced
  • 3.5 oz fresh shiitake mushrooms, chopped
  • 1 medium carrot, sliced into fine sticks
  • 1 medium red bell pepper, sliced into fine sticks
  • 1 heaped cup small broccoli florets
  • 1 cup white cabbage, thinly sliced

Garnishes

  • Green onion, finely chopped
  • Sesame seeds

Sauce

  • 1 batch of BBQ Sauce or Chinese stir-fry sauce (quantity to taste)

Instructions

  1. Prepare the Noodles: Soak the vermicelli noodles in hot water according to package directions until tender. Drain and set aside.
  2. Prep the Vegetables: Peel and mince the garlic and ginger. Chop the shiitake mushrooms. Cut the broccoli into small florets. Thinly slice the carrot, red bell pepper, and white cabbage into fine sticks or strips for even cooking.
  3. Heat the Oil and Aromatics: In a large skillet or wok, warm the sesame oil over medium heat. Once hot, add the minced ginger and garlic and sauté for about one minute until fragrant but not browned.
  4. Cook the Vegetables: Add the mushrooms, carrot, bell pepper, broccoli, and cabbage to the skillet. Stir to combine everything evenly, then cover the pan with a lid. Reduce the heat to low and allow the vegetables to steam and become tender over 7-8 minutes, ensuring they remain crisp-tender and not mushy.
  5. Toss Noodles and Sauce: Add the drained vermicelli noodles and the batch of BBQ or Chinese stir-fry sauce to the cooked vegetables. Stir well to coat everything uniformly with the sauce and heat through.
  6. Garnish and Serve: Serve the stir-fry hot in bowls garnished with finely chopped green onions and a sprinkle of sesame seeds for added texture and flavor. Enjoy your vibrant vegetable vermicelli stir-fry!

Notes

  • Soaking vermicelli noodles rather than boiling them avoids overcooking and keeps the noodles tender but firm.
  • Use fresh shiitake mushrooms for the best texture and flavor; dried shiitakes can be substituted but require rehydration.
  • Feel free to customize the vegetable mix based on seasonal availability or preference.
  • The BBQ or Chinese stir-fry sauce can be homemade or store-bought depending on convenience.
  • This dish is best served immediately to maintain the fresh texture of the vegetables and noodles.
