Fritters

  • 3/4 cup red lentils
  • 1 small red onion, chopped

  • 2 medium-sized potatoes, peeled and grated

  • 1 teaspoon regular paprika powder

Vegan Sriracha Mayonnaise

  • 3 tablespoons vegan mayonnaise
  • 1 teaspoon tomato paste
  • 1 teaspoon garlic powder
  • 1/2 teaspoon smoked paprika powder
  • Salt, to taste
  • Black pepper, to taste
  • Sriracha sauce, to taste

Instructions

  1. Cook Lentils: Rinse and cook the red lentils according to the package instructions until tender. Drain and set aside to cool.
  2. Prepare Vegetables: Peel and grate the potatoes and the carrot. Finely chop the red onion and mince the garlic cloves.
  3. Mix Ingredients: In a large bowl, combine the cooked lentils, grated potatoes, grated carrot, chopped onion, minced garlic, all-purpose flour, smoked paprika, regular paprika, marjoram, salt, and black pepper. Mix thoroughly until well incorporated.
  4. Form and Cook Fritters: Heat some oil in a large non-stick pan over medium heat. Scoop about 1 1/2 heaped tablespoons of the mixture for each fritter and carefully place in the pan. Cook for about 3 to 4 minutes on each side until golden brown and cooked through. Alternatively, for an oil-free version, place formed fritters on a baking tray lined with parchment paper and bake in a preheated oven at 400°F (200°C) for about 20 minutes, flipping halfway through cooking.
