Ingredients

Olives

  • 6 oz. jar manzanilla olives, drained
  • 6 oz. jar pitted Kalamata olives, drained

Herbs & Flavorings

  • 1/4 cup fresh roughly chopped parsley
  • 2–3 cloves garlic
  • 1 teaspoon dried oregano

Liquids & Condiments

  • 1/4 cup olive oil
  • 2 teaspoons white vinegar
  • 1 teaspoon Dijon mustard

Seasonings

  • Kosher salt, to taste
  • Fresh cracked pepper, to taste

Instructions

  1. Prepare Ingredients: Drain both the manzanilla and Kalamata olives thoroughly to remove excess liquid. Roughly chop the fresh parsley and peel the garlic cloves.
  2. Combine in Food Processor: Add the drained olives, chopped parsley, garlic cloves, olive oil, white vinegar, Dijon mustard, and dried oregano into the bowl of a food processor.
  3. Pulse and Mince: Pulse the ingredients until they are well minced and combined, stopping occasionally to scrape down the sides of the processor bowl to ensure even mixing and a uniform texture.
  4. Season to Taste: Transfer the tapenade mixture to a serving dish and season with kosher salt and fresh cracked pepper according to your preference, stirring gently to incorporate the seasoning evenly.
  5. Garnish and Serve: Garnish the tapenade with additional fresh chopped parsley for a bright touch. Serve immediately alongside crostini or slices of French baguette for a delicious, savory appetizer.
