These Vegan Chocolate Coconut Date Bars are a deliciously healthy and guilt-free treat, made with natural ingredients like medjool dates, shredded coconut, and rich dark chocolate. Gluten-free, oil-free, and easy to prepare, these no-bake bars combine chewy coconut and sweet dates with a smooth dark chocolate topping for a perfect snack or dessert.

Ingredients

Base Ingredients

  • 1 cup pitted medjool dates, packed (about 11-12 dates)
  • 1 & 1/2 cups shredded unsweetened coconut
  • 3 tbsp cacao or cocoa powder
  • 1 & 1/4 tsp vanilla bean paste
  • 1/4 tsp pink Himalayan salt + an extra pinch

Topping

  • 1/2 cup dark chocolate chips
  • Extra shredded coconut for topping (optional)

Instructions

  1. Prepare the base mixture: Start by adding all of the base ingredients, excluding the chocolate chips, into a food processor. Pulse for about one minute until the mixture becomes soft, moist, and slightly sticky. Ensure there are no large chunks of dates remaining. If the mixture looks dry, continue pulsing. Note that your dates should be plump and moist; if dry, soak them in hot water for 10-15 minutes, drain, then proceed.
  2. Press mixture into pan: Line a loaf pan with parchment paper. Transfer the processed mixture into the pan and firmly press it down with your fingers or a spatula to create an even and compact layer. This helps the bars hold together well.
  3. Melt the chocolate: Place the dark chocolate chips in a microwave-safe bowl. Microwave on medium power for about 1 minute and 30 seconds, stirring every 30 seconds to ensure smooth melting without burning.
  4. Top and set the bars: Pour the melted chocolate evenly over the pressed base mixture in the loaf pan. Spread it smoothly with a spatula. Optionally, sprinkle extra shredded coconut on top. Place the pan in the freezer for approximately 10 minutes to allow the chocolate to harden.
  5. Slice and serve: Once the chocolate is set, remove the bars from the pan, slice into six pieces, and enjoy. Store leftovers covered in the refrigerator; the bars can be enjoyed chilled or allowed to soften slightly at room temperature before eating.
