This Tzatziki Potato Salad is a refreshing and creamy side dish featuring tender potatoes tossed in a tangy Greek-style cucumber sauce made with yogurt, fresh herbs, and lemon. Enhanced with crumbled feta and green onions, it’s perfect for a light lunch or as a complement to grilled dishes.

Ingredients

Potatoes

  • 1 1/2 pounds potatoes, diced (optionally peeled)

Tzatziki Sauce

  • 1/4 cup plain Greek yogurt
  • 1/4 cup mayonnaise (or plain Greek yogurt)
  • 1/2 cup cucumber, peeled, seeded, grated, and squeezed to drain
  • 1 clove garlic, grated
  • 1 tablespoon fresh dill, chopped
  • 1 tablespoon fresh mint, chopped
  • 2 tablespoons lemon juice (~1/2 lemon)
  • salt and pepper to taste

Garnish and Mix-ins

  • 1/4 cup feta, crumbled (optional)
  • 2 green onions, thinly sliced

Instructions

  1. Cook the potatoes: Place the diced potatoes in a large pot and cover them with water. Add a pinch of salt, bring to a boil over high heat, then reduce the heat to a simmer. Cook until the potatoes are just tender, about 8-10 minutes. Drain the water and allow the potatoes to cool.
  2. Prepare the Tzatziki sauce: In a mixing bowl, combine the Greek yogurt, mayonnaise (or additional yogurt), grated cucumber (well drained), grated garlic, chopped dill, chopped mint, lemon juice, salt, and pepper. Mix thoroughly to blend all ingredients into a smooth sauce.
  3. Combine salad ingredients: Gently mix the cooled potatoes with the prepared Tzatziki sauce. Fold in the crumbled feta and thinly sliced green onions.
  4. Chill and serve: For best flavor, refrigerate the salad for at least a couple of hours before serving. The flavors will meld and intensify, creating a deliciously cool and creamy potato salad.

Notes

  • Any potato variety can be used: Russet potatoes will yield a creamier texture but may break down; white and red potatoes hold their shape well; golden or yellow potatoes offer a balance.
  • Feel free to use your favorite fresh herbs in place of or alongside dill and mint.
  • Optional additions include 1/4 cup diced or sliced red onions for extra bite.
  • Adding 1/4 cup kalamata olives can give an additional tangy, briny flavor.
  • This salad tastes great right after preparation but improves after chilling in the refrigerator for a couple of hours.
