A hearty and comforting Turkey Gnocchi Soup packed with ground turkey, fresh vegetables, tender gnocchi, and creamy butter beans. This flavorful soup is enriched with herbs and finished with a squeeze of lemon, cream, and Parmigiano cheese, making it perfect for a cozy meal.

Ingredients

Base Ingredients

  • ¼ cup olive oil
  • pinch chili flakes
  • 1 medium onion, sliced
  • 3 garlic cloves, minced
  • 1 large carrot, sliced in rounds
  • 1 celery stalk, diced

Main Ingredients

  • 1 pound ground turkey
  • 1 tsp dried thyme
  • 4 cups chicken stock
  • 2-3 cups water (more if needed)
  • 1 medium zucchini, sliced in rounds
  • 4 cups black kale, chopped
  • 398 ml butter beans (canned or cooked)
  • 400 grams gnocchi

Finishing Ingredients

  • ½ lemon, squeezed
  • ½ cup 10% cream
  • Parmigiano cheese, grated to taste
  • Sea salt and pepper, to taste
  • 2 tbsp fresh parsley, chopped (optional)

Instructions

  1. Heat the base: Heat a large Dutch oven over medium-high heat to prepare for sautéing.
  2. Sauté aromatics: Add olive oil and a pinch of chili flakes to the hot pot. Add sliced onion, carrot, and diced celery. Season with salt and pepper to taste. Cover and cook for about 5 minutes to soften the vegetables.
  3. Add garlic: Stir in the minced garlic and continue cooking until the vegetables are softened and fragrant.
  4. Cook turkey: Add ground turkey, breaking it apart with a wooden spoon, and cook until the meat loses its pink color completely.
  5. Season turkey: Sprinkle dried thyme over the meat and stir to coat evenly. Adjust salt and pepper seasoning as needed.
  6. Add vegetables: Add sliced zucchini and cook for 1-2 minutes, then add chopped kale to the pot.
  7. Add liquids and simmer: Pour in chicken stock and 2 to 3 cups of water, more if necessary. Bring the soup to a boil, then reduce heat to medium. Partially cover the pot and simmer for 15 minutes, stirring occasionally.
  8. Add gnocchi and beans: Stir in the butter beans and gnocchi. Cook until the gnocchi is tender, usually 3 to 5 minutes. Stir in fresh lemon juice to brighten flavors.
  9. Finish with cream and cheese: Stir in the 10% cream and grate Parmigiano cheese generously into the soup, stirring until well combined.
  10. Adjust seasoning and serve: Taste the soup and adjust salt and pepper as desired. Optionally, garnish with fresh parsley before serving. Enjoy warm.

Notes

  • Use fresh ingredients for the best flavor, but frozen kale and pre-cooked beans can be substituted.
  • If the soup is too thick, add extra water or chicken stock to reach your preferred consistency.
  • You can substitute ground turkey with ground chicken or lean ground beef if preferred.
  • To make the soup spicier, add more chili flakes or a dash of hot sauce.
