Ingredients

Fish

  • 1 lb tilapia fillets
  • 3 tbsp butter
  • salt and pepper, to taste

Sauce

  • 1 medium onion, diced
  • 2 garlic cloves, minced
  • 6 oz roasted peppers, chopped
  • 6 oz roasted peppers, pureed
  • ¾ cup heavy cream
  • ½ cup grated Parmesan cheese

Garnish

  • chopped parsley
  • additional grated Parmesan cheese

Instructions

  1. Fry the Tilapia: Melt 2 tablespoons of butter in a large, non-stick skillet over medium heat. Add the tilapia fillets and cook for 3 to 4 minutes on each side, or until the fish is cooked through and flakes easily with a fork.
  2. Season and Set Aside: Season the cooked fish with salt and pepper to taste. Remove the fillets from the skillet and set aside on a plate.
  3. Sauté Onion and Butter: In the same skillet, add the remaining 1 tablespoon of butter. Add the diced onion and sauté for 5 minutes, stirring occasionally until the onion becomes translucent and soft.
  4. Add Garlic and Roasted Peppers: Add the minced garlic along with the chopped and pureed roasted peppers to the skillet. Cook the mixture for another 5 minutes, allowing the flavors to combine and the sauce to thicken slightly.
  5. Create Creamy Sauce: Stir in the heavy cream and grated Parmesan cheese. Turn off the heat and mix well. Taste the sauce and add more salt if needed to enhance the flavor.
  6. Combine Fish and Sauce: Return the tilapia fillets to the skillet and spoon the roasted pepper sauce over the top, covering the fish to absorb the delicious sauce.
  7. Garnish and Serve: Garnish with chopped parsley and extra grated Parmesan cheese before serving to add freshness and a touch of salty richness.
