A wholesome and customizable granola recipe made with oats, nuts, and seeds, naturally sweetened with maple syrup or honey. Baked to golden perfection, this granola is crunchy, satisfying, and perfect for breakfast or snacking. The recipe yields about 8 cups, or 16 half-cup servings, and can be tailored with your favorite nuts, seeds, dried fruit, and optional mix-ins like chocolate chips or coconut flakes.

Ingredients

Dry Ingredients

  • 4 cups old-fashioned rolled oats (use certified gluten-free oats for gluten-free granola)
  • 1 ½ cups raw nuts and/or seeds (e.g., 1 cup pecans and ½ cup pepitas)
  • 1 teaspoon fine-grain sea salt (reduce to ¾ teaspoon if using table salt)
  • ½ teaspoon ground cinnamon

Wet Ingredients

  • ½ cup melted coconut oil or olive oil
  • ½ cup maple syrup or honey
  • 1 teaspoon vanilla flavoring

Add-ins

  • ⅔ cup dried fruit, chopped if large (e.g., dried cranberries)
  • Optional: ½ cup chocolate chips or coconut flakes

Instructions

  1. Preheat oven: Set your oven to 350 degrees Fahrenheit and line a large rimmed baking sheet with parchment paper to prepare for baking the granola.
  2. Mix dry ingredients: In a large mixing bowl, combine oats, nuts and/or seeds, sea salt, and ground cinnamon. Stir well to evenly distribute the spices and salt throughout the dry mixture.
  3. Add wet ingredients: Pour melted coconut or olive oil, maple syrup or honey, and vanilla flavoring over the dry mixture. Mix thoroughly until every oat and nut is lightly coated for perfect binding and flavor.
  4. Spread and bake: Transfer the granola mixture onto the prepared baking sheet. Use a large spoon to spread it evenly in a thin layer. Bake for 21 to 24 minutes until lightly golden, stirring halfway through. For clumpier granola, press the mixture down evenly with a spatula after stirring.
  5. Cool and add fruit: Allow the granola to cool completely on the baking sheet for at least 45 minutes without disturbing it. Once cooled, sprinkle the dried fruit and optional mix-ins like chocolate chips or coconut flakes over the granola. Break into pieces as desired.
  6. Store: Store the finished granola in an airtight container at room temperature for 1 to 2 weeks or freeze in a sealed bag for up to 3 months. If frozen, let the granola thaw at room temperature for 5 to 10 minutes before serving as dried fruit may freeze solid.

Notes

  • Use certified gluten-free oats if you need the recipe to be gluten-free.
  • Adjust salt quantities if using table salt versus sea salt to avoid over-salting.
  • For clumpier granola, press down the mixture firmly after stirring during baking.
  • Mix in dried fruit and optional add-ins only after the granola has fully cooled to prevent sogginess.
  • Store in airtight containers to maintain freshness and crispness.
  • This granola is highly flexible; swap nuts, seeds, or sweeteners to suit dietary preferences.
