  • 2 tsp dried minced garlic

Mushrooms and Onions

  • 3 tbsp salted butter
  • 2 tbsp olive oil
  • 8 ounces mushrooms, sliced
  • 1 yellow onion, sliced
  • 2 tbsp water

Steak Tips

  • 1 pound sirloin beef tips
  • 2 tsp Texas Roadhouse steak seasoning
  • 1 tbsp butter

Gravy

  • 2 tbsp butter
  • 2 tbsp all-purpose flour
  • 1 ½ cups water
  • 2 tsp soy sauce
  • 1 tsp Better Than Bouillon beef base
  • 1/4 tsp coarse sea salt

To Serve

  • Sour cream (optional)
  • Mashed potatoes or Texas Roadhouse seasoned rice (optional)

Instructions

  1. Prepare mushroom seasoning: In a small bowl, combine 1/4 tsp sea salt, 1/2 tsp sugar, 1/2 tsp black pepper, 3/4 tsp onion salt, and 2 tsp dried minced garlic to create a flavorful mushroom seasoning.
  2. Sauté mushrooms and onions: In a large, deep skillet, melt 3 tbsp salted butter with 2 tbsp olive oil over medium-high heat. Add sliced mushrooms and onions, then sprinkle the prepared mushroom seasoning over them. Sauté until the mushrooms are tender and caramelized, developing a rich flavor.
  3. Deglaze pan: Add 2 tbsp water to the skillet and stir to lift all flavorful bits from the bottom of the pan, enhancing the taste of your dish.
  4. Keep mushrooms warm: Remove only the mushrooms and onions from the pan (avoid extra sauce) and place them in a separate bowl or pan. Cover to keep warm while you cook the steak tips.
  5. Season steak tips: Coat 1 pound of sirloin beef tips evenly with 2 tsp Texas Roadhouse steak seasoning to infuse the meat with bold flavor.
  6. Sear steak tips: In the same skillet, add 1 tbsp butter and melt over medium-high heat. Add the seasoned steak tips and sear for 1-2 minutes on each side until nicely browned but still medium-rare. Remove from the pan and keep warm.
  7. Make the gravy base: To the same skillet, add remaining 2 tbsp butter and melt. Whisk in 2 tbsp all-purpose flour and cook for 1-2 minutes to form a roux, which will thicken the sauce.
  8. Add liquids and seasonings: Gradually whisk in 1 ½ cups water, 2 tsp soy sauce, 1 tsp Better Than Bouillon beef base, and 1/4 tsp coarse salt. Stir constantly to ensure the mixture thickens into a smooth gravy.
  9. Simmer gravy: Let the sauce simmer gently for about 5 minutes until it thickens and reduces slightly, intensifying the flavors.
  10. Plate and serve: Arrange the warm mushrooms and onions on plates, top with the seared steak tips, and generously cover with the rich gravy. Serve with a dollop of sour cream and a side of mashed potatoes or Texas Roadhouse seasoned rice for a complete meal.

Notes

  • Be careful not to overcook the steak tips; searing quickly keeps them tender and juicy.
  • You can substitute the sirloin tips with other tender cuts like filet or ribeye bites.
  • Adjust seasoning in the gravy to your taste preference, especially the salt.
  • For a gluten-free version, substitute all-purpose flour with a gluten-free flour blend.
  • Serve immediately to enjoy the best texture and flavor.
