Delicious and wholesome Strawberry Banana Oat Bars made with a homemade chia strawberry jam and a moist oat and banana base. These bars are naturally sweetened with maple syrup and perfect for a healthy snack or breakfast option.

Ingredients

Chia Strawberry Jam

  • 2 cups (280 g) frozen strawberries*
  • 2 Tbsp (30 ml) maple syrup
  • 2 Tbsp (14 g) chia seeds

Oat Bar Base

  • 1 cup (80 g) quick oats
  • 3/4 cup (80 g) oat flour**
  • 1 tsp baking powder
  • 1/4 tsp salt
  • 2 medium-sized ripe bananas, mashed (240 g or 1 cup)
  • 3 Tbsp (45 ml) maple syrup
  • 1 tsp vanilla flavoring

Instructions

  1. Make the jam: Add the frozen strawberries and maple syrup into a medium saucepan over medium heat. Cook for 5 to 15 minutes until the berries begin to release their juices and soften, depending on freezing status. Bring the mixture to a gentle boil, stirring occasionally, for about 5 to 10 minutes until it reduces and thickens. Use a spoon or potato masher to break up the berries further for a chunky jam.
  2. Incorporate chia seeds: Lower the heat to medium-low and stir in the chia seeds. Cook for an additional 5 minutes. Remove the saucepan from heat and allow the jam to cool and thicken further as it rests.
  3. Prepare for baking: Preheat your oven to 375°F (190°C). Line an 8 x 8 inch (20 x 20 cm) baking pan with parchment paper, leaving an overhang on the sides for easy removal later.
  4. Make the oat bar dough: In a large mixing bowl, combine quick oats, oat flour, baking powder, and salt. Add the mashed ripe bananas, maple syrup, and vanilla extract. Mix thoroughly until a uniform dough forms.
  5. Assemble the bars: Spread three-quarters of the oat mixture evenly into the prepared baking pan using a spatula. Spoon the chia strawberry jam over the surface, spreading it evenly while leaving a small margin around the edges to prevent burning. Drop the remaining oat mixture over the jam and gently spread and swirl it slightly into the jam layer.
  6. Bake the bars: Bake in the preheated oven for 30 to 35 minutes until the top turns a light golden brown.
  7. Cool and store: After baking, allow the bars to cool in the pan for about 10 minutes, then transfer to a wire rack to cool completely. Store the bars in an airtight container at room temperature for up to 5 days, or refrigerate if the room is warm.
