Ingredients

Noodles

  • 16 ounces brown rice noodles

Sauce

  • 3 large cloves garlic or 4-5 small cloves, finely minced
  • 1 tablespoon fresh grated ginger
  • 1 tablespoon oil (olive or any neutral oil)
  • 2/3 cup creamy peanut butter
  • 4 tablespoons low sodium tamari or soy sauce
  • 1/3 to 1 cup hot water (to adjust sauce consistency)
  • 1 tablespoon rice vinegar
  • 1 tablespoon toasted sesame oil
  • 1-2 tablespoons sriracha (adjust to taste)
  • 1-2 tablespoons maple syrup or honey
  • 1/2 teaspoon red pepper flakes (optional, for extra spice)
  • Optional: 2 teaspoons chili garlic sauce

Instructions

  1. Boil noodles: Bring a large pot of water to a rolling boil and cook the brown rice noodles according to the package instructions. Once cooked, drain and set aside.
  2. Prepare garlic and ginger: Finely mince the garlic cloves. Grate fresh ginger to get about 1 tablespoon.
  3. Saute garlic: Heat 1 tablespoon of oil in a sauté pan over low heat. Add the minced garlic and sauté gently for about 2 minutes until it turns golden brown.
  4. Add ginger: Add the grated ginger to the pan and continue to sauté for an additional 1 minute, allowing the flavors to meld.
  5. Make the sauce: Remove the pan from heat. Add peanut butter, low sodium tamari or soy sauce, rice vinegar, toasted sesame oil, sriracha, maple syrup or honey, red pepper flakes, and optional chili garlic sauce into the pan. Start by adding 1/3 cup of hot water and whisk everything together until smooth. Add more hot water, up to 1 cup total, to reach your desired sauce consistency.
  6. Taste and adjust: Taste the sauce and adjust the seasoning by adding more soy sauce for saltiness, sriracha for heat, or maple syrup/honey for sweetness according to your preference.
  7. Combine noodles and sauce: Add about half of the prepared sauce to the cooked noodles and toss thoroughly to coat. Add more sauce incrementally if you prefer a saucier dish.
  8. Serve: Transfer noodles to serving plates and garnish with crushed peanuts, chopped scallions, and additional red pepper flakes if desired. Enjoy alongside your favorite vegetables or protein.
