A comforting and hearty Slow-Cooker Turkey and Pumpkin Stew combining tender turkey chunks with smooth pumpkin puree and warm spices, perfect for an easy, flavorful meal that cooks slowly to meld the rich autumn flavors.

Ingredients

Meat

  • 1.5 pounds Turkey breast or thigh, cut into chunks (preferably boneless)

Produce & Aromatics

  • 1 medium Onion, chopped
  • 2 cloves Garlic, minced

Pantry & Spices

  • 2 cups Pumpkin puree (fresh or canned)
  • 1 cup Chicken or turkey broth (for thinning and flavor)
  • 1 teaspoon Ground cinnamon
  • 1/2 teaspoon Ground ginger
  • 1 teaspoon Salt (or to taste)
  • 1/2 teaspoon Black pepper
  • 2 tablespoons Olive oil

Instructions

  1. Heat olive oil and cook onions: Start by heating the olive oil in a skillet over medium heat. Add the chopped onion and cook until it becomes translucent and fragrant, about 3-4 minutes.
  2. Sauté garlic: Add the minced garlic to the skillet and cook for another 30 seconds until it’s aromatic, careful not to let it burn.
  3. Transfer to slow cooker: Transfer the cooked onion and garlic mixture into your slow cooker. Add the turkey chunks, spreading them evenly across the bottom.
  4. Add pumpkin and seasoning: Add the pumpkin puree, broth, ground cinnamon, ground ginger, salt, and black pepper into the slow cooker. Stir everything together until well combined.
  5. Cook slowly: Cover the slow cooker with the lid and set to low. Let it cook for about 6 hours, or until the turkey is tender and flavors have melded beautifully.
  6. Final seasoning and stir: Once cooked, gently stir the stew to distribute the pumpkin and turkey evenly. Check the seasoning and add extra salt or spices if needed.
  7. Serve and garnish: Serve the stew hot, garnished with fresh herbs if desired, enjoying its hearty, velvety texture and aromatic warmth.

Notes

  • Using boneless turkey cuts allows for even cooking and easier serving.
  • Fresh pumpkin puree can be used instead of canned for a more natural flavor.
  • You can adjust spices like cinnamon and ginger to your taste preference.
  • Slow cooking on low ensures tender turkey and rich flavor development.
  • Serve with crusty bread or over rice for a complete meal.
  • Leftovers keep well and taste even better the next day after flavors meld further.
