This Slow Cooker Ravioli Lasagna is a comforting, easy-to-make Italian-inspired dish that layers frozen ravioli, browned ground beef, flavorful marinara sauce, and melted mozzarella cheese in a slow cooker. Perfect for busy days, this recipe requires minimal prep and slow cooking to create a hearty, delicious meal with minimal effort.

Ingredients

Meat and Aromatics

  • 1 lb. ground beef (can substitute mild sausage)
  • 1 cup white onion, diced
  • 1/2 tsp. salt
  • 1/4 tsp. pepper
  • 1/4 tsp. garlic powder
  • 1/2 tsp. dried leaf oregano (not ground)

Main Ingredients

  • 25 oz. frozen ravioli (5 cheese recommended, keep frozen)
  • 24 oz. marinara sauce (Rao’s preferred)
  • 8 oz. shredded mozzarella cheese (about 2 cups)

Other

  • Non-stick cooking spray for slow cooker

Instructions

  1. Brown the meat and aromatics: In a medium-sized non-stick skillet over medium-high heat, add the ground beef and diced onion. Season with salt, pepper, garlic powder, and dried oregano. Cook until the meat is browned but keep a few tablespoons of liquid in the pan to keep the mixture moist; do not drain all the fat.
  2. Prepare the slow cooker: Spray the inside of the slow cooker with non-stick cooking spray to prevent sticking.
  3. Layer marinara sauce: Pour half of the marinara sauce evenly on the bottom of the slow cooker.
  4. Add first ravioli layer: Spread half of the frozen ravioli on top of the sauce layer carefully, do not thaw the ravioli before adding.
  5. Add browned meat mixture: Evenly distribute all the cooked ground beef and onion mixture over the ravioli.
  6. Add second ravioli layer: Spread the remaining frozen ravioli evenly over the meat layer.
  7. Top with remaining sauce: Pour the remaining marinara sauce evenly over the second ravioli layer.
  8. Add cheese: Sprinkle the shredded mozzarella cheese evenly on top of the sauce.
  9. Cook in slow cooker: Cover with the lid and cook on LOW for 4 hours, allowing flavors to meld and the ravioli to cook through.
  10. Serve: Once done, serve hot and enjoy your hearty, slow-cooked ravioli lasagna.

Notes

  • Do not thaw the frozen ravioli before layering; it cooks perfectly in the slow cooker as is.
  • Keeping a little bit of the fat and juices from the browned meat adds moisture and flavor.
  • You can substitute ground beef with mild Italian sausage for a different flavor.
  • Rao’s marinara sauce is recommended for its rich flavor, but any quality marinara will work.
  • Use a slow cooker liner or spray well to make cleanup easier.
  • This dish serves well with a side salad or garlic bread for a complete meal.
