  • 1 red bell pepper, diced

Sauce

  • 1/2 cup peanut butter (creamy or crunchy with minimal ingredients)
  • 1/2 cup chicken broth
  • 1/4 cup soy sauce
  • 1 tbsp honey
  • 1 tsp sesame oil
  • 1 tsp chili garlic paste
  • 1 tbsp lime juice
  • 2 tbsp cilantro, chopped

Instructions

  1. Prepare vegetables and chicken: Add the diced red bell pepper, diced yellow onion, and chopped garlic to the bottom of the slow cooker to form a flavorful base. Place the chicken breasts on top of the vegetables.
  2. Make the peanut sauce: In a bowl or glass measuring cup, whisk together the creamy peanut butter, chicken broth, soy sauce, honey, sesame oil, and chili garlic paste until smooth and well combined.
  3. Cook the chicken: Pour the peanut sauce evenly over the chicken breasts and vegetables. Cover with the lid and cook on HIGH for 2 to 3 hours or on LOW for 4 to 5 hours until the chicken is fully cooked and tender.
