  • ½ cup chicken broth
  • ¼ cup olive oil
  • ¼ cup lime juice
  • 4 cloves garlic, peeled and smashed
  • 1 jalapeno, seeded and chopped
  • 2 tsp cumin
  • 1 tsp paprika
  • 1 tsp kosher salt
  • 1 tsp ground black pepper

  • 2 lb boneless skinless chicken breasts
  • ½ cup chopped cilantro

Instructions

  1. Prepare the sauce: Place the chicken broth, olive oil, lime juice, garlic, jalapeno, cumin, paprika, kosher salt, and black pepper in a food processor. Blend until the garlic and jalapeno are finely pulverized and the sauce is evenly combined.
  2. Arrange the chicken: Lay the chicken breasts in a single layer at the bottom of the slow cooker.
  3. Add the sauce: Pour the blended sauce evenly over the chicken breasts in the slow cooker.
