A hearty and comforting Slow Cooker Beef and Potatoes Au Gratin recipe featuring layers of tender russet potatoes, seasoned ground beef, onions, and sharp cheese, slow-cooked to perfection for a rich and satisfying meal.

Ingredients

Beef

  • 1 lb. ground beef (seasoned with a touch of salt and pepper)

Vegetables

  • 3 lbs. peeled russet potatoes, sliced ¼ inch thick (about 7 cups after slicing)
  • 1 cup thinly sliced white onion

Seasonings

  • 1 tsp. paprika
  • ½ tsp. garlic powder
  • 1 tsp. parsley
  • 1 tsp. salt
  • ¼ tsp. pepper

Dairy & Broth

  • 3 cups shredded sharp cheese
  • ½ cup beef broth (or chicken broth)

Instructions

  1. Brown the ground beef: Heat a skillet over medium heat and cook the ground beef until fully browned, breaking it apart with a spoon. Drain excess fat and season with a touch of salt and pepper.
  2. Prepare seasoning mix: In a small bowl, combine paprika, garlic powder, parsley, salt, and pepper thoroughly to create the seasoning blend.
  3. Layer ingredients in slow cooker: Add half of the sliced potatoes in an even layer at the bottom of the slow cooker. Sprinkle half of the sliced onions over the potatoes, then half of the seasoning mix. Next, add half of the cooked ground beef, and top with half of the shredded cheese. Repeat these layers once more in the same order.
  4. Add broth evenly: Drizzle the ½ cup of beef or chicken broth evenly over all the layers in the slow cooker to ensure moisture while cooking.
  5. Cook: Cover with the slow cooker lid and cook on high for 4 hours. Avoid opening the lid during cooking to keep the heat consistent and to allow the potatoes to soften properly.
  6. Serve: Once cooked, turn off the slow cooker, carefully scoop portions onto plates, and enjoy this warm, cheesy au gratin dish.

Notes

  • Use russet potatoes for best texture in au gratin dishes as they hold up well to slow cooking.
  • Do not open the slow cooker lid during cooking to prevent heat loss, which may make potatoes undercooked.
  • Feel free to substitute sharp cheese with your preferred variety such as cheddar or a blend for different flavor profiles.
  • This recipe can be made with beef or chicken broth depending on your taste preference or dietary needs.
  • For additional flavor, you can sauté the onions before layering if desired.
