This Simple Sardine Salad is a quick, nutritious, and flavorful dish perfect for a light lunch or snack. Combining protein-rich sardines with fresh minced vegetables, tangy Greek yogurt, and a hint of smoky paprika, it’s a wholesome salad that comes together in just 10 minutes. Serve it with crackers or chips for a satisfying treat.

Ingredients

Salad Ingredients

  • 2 cans sardines in lemon (drained)
  • 1 cup minced veggies (such as onion, celery, and bell pepper)
  • 1.5 tbsp Greek yogurt
  • 1 tbsp mayonnaise
  • 1/2 tbsp mustard
  • 1.5 tbsp capers
  • 1/4 tsp smoked paprika
  • 1/8 tsp kosher salt

Instructions

  1. Drain and mash sardines: Drain the oil from the sardine cans thoroughly and transfer the sardines into a mixing bowl. Using a fork, mash the sardines until they are broken down but still retain some texture.
  2. Mix remaining ingredients: Add the minced vegetables, Greek yogurt, mayonnaise, mustard, capers, smoked paprika, and kosher salt to the mashed sardines. Stir well to combine all ingredients evenly.
  3. Serve: Spoon the sardine salad onto a plate or into a bowl and serve alongside crackers or chips for a crunchy accompaniment.

Notes

  • For minced veggies, a combination of onion, celery, and bell peppers works well for texture and flavor.
  • You can substitute Greek yogurt with additional mayo for a richer taste.
  • This salad can be stored in an airtight container in the refrigerator for up to 2 days.
  • Adjust the amount of smoked paprika and mustard to taste for varied flavor profiles.
  • Great as a sandwich filling or served on top of a bed of greens for a more substantial meal.
