Ingredients

Main Ingredients

  • 1 (16 ounce/454 gram) package super-firm tofu, drained
  • 2 tablespoons soy sauce
  • 2 tablespoons vegetable oil
  • 1 teaspoon liquid smoke
  • 2 teaspoons smoked paprika
  • 1 teaspoon onion powder
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon ground cumin
  • 3/4 cup vegan barbecue sauce
  • 4 sandwich buns

Toppings

  • Vegan coleslaw
  • Dill pickle slices

Instructions

  1. Preheat the Oven: Preheat your oven to 400°F (200°C) to prepare for baking the tofu.
  2. Shred the Tofu: Use a box grater to coarsely shred the block of super-firm tofu. Expect some crumbling; this adds great texture.
  3. Season the Tofu: Spread the shredded tofu evenly on a baking sheet. Drizzle with soy sauce, vegetable oil, and liquid smoke. Sprinkle smoked paprika, onion powder, garlic powder, and ground cumin over the tofu. Use your hands to toss everything together until the tofu is evenly coated.
  4. Bake the Tofu: Arrange the seasoned tofu into an even layer on the baking sheet. Bake in the preheated oven for about 20 minutes, allowing the tofu to darken and become a bit crispy around the edges.
  5. Add Barbecue Sauce: Remove the tofu from the oven and pour the vegan barbecue sauce over it. Gently toss using a spatula or your hands (be careful, the tofu will be hot) until the tofu pieces are evenly coated with sauce.
  6. Final Bake: Return the tofu to the oven and bake for an additional 5 minutes to heat the barbecue sauce thoroughly and allow it to thicken slightly on the tofu.
  7. Assemble Sandwiches: Pile the barbecue tofu onto the sandwich buns. Top with vegan coleslaw and dill pickle slices as desired. Serve immediately and enjoy your smoky, flavorful sandwiches!

Notes

  • For best texture, press the tofu before shredding to remove excess water, though it’s not mandatory.
  • You can customize the level of smokiness by adjusting the amount of liquid smoke and smoked paprika.
  • Vegan coleslaw adds a nice crunch and balance; store-bought or homemade works well.
  • These sandwiches are great served with a side of chips or a fresh salad for a complete meal.
  • Leftover tofu barbecue can be refrigerated up to 3 days and reheated in the oven or stovetop.
