A quick and flavorful Sesame Noodle Salad featuring a creamy peanut sauce, fresh vegetables, and crunchy peanuts. This easy-to-make dish is perfect for a light lunch or a side dish, served warm or chilled.

Ingredients

For the Sauce

  • 5 tablespoons low-sodium soy sauce
  • 3 tablespoons creamy peanut butter
  • 2 tablespoons rice vinegar
  • 2 teaspoons grated fresh ginger
  • 1 teaspoon white sugar
  • 2 cloves garlic, finely chopped
  • 2 tablespoons sesame oil

For the Salad

  • 8 ounces spaghetti, uncooked
  • 4 ounces red cabbage, finely shredded
  • 4 ounces carrots, finely shredded
  • 2 stalks green onions, finely sliced
  • 1/4 cup roasted peanuts, chopped

Instructions

  1. Cook Pasta: Boil the spaghetti according to package directions without adding salt to the water. Once cooked, drain the pasta and do not rinse it. Allow the noodles to cool for about 10 minutes.
  2. Prepare Sauce: In a microwave-safe bowl, combine low-sodium soy sauce, peanut butter, rice vinegar, grated fresh ginger, sugar, and finely chopped garlic. Microwave on high for 1 minute to soften the peanut butter and warm the mixture. Remove and whisk until smooth, then stir in sesame oil.
  3. Combine Ingredients: Toss the cooled spaghetti with shredded red cabbage, shredded carrots, and the prepared peanut sauce until everything is evenly coated. If the sauce is too thick, add a little water to thin it out as you mix. At this stage, the salad can be refrigerated for up to one day before serving.
  4. Add Final Touches and Serve: Just before serving, stir in the sliced green onions and top the salad with chopped roasted peanuts. Serve the sesame noodle salad warm, chilled, or at room temperature as preferred.

Notes

  • Do not salt the pasta water as the peanut sauce provides enough seasoning.
  • Natural peanut butter can be used as an alternative to creamy peanut butter.
  • The noodles can be refrigerated for up to a day after mixing with the sauce.
  • Adjust the sauce consistency with water if it is too thick to coat the noodles well.
