Saltine Cracker Toffee is a delightful treat combining salty and sweet flavors with a crispy toffee layer topped with melted chocolate and crunchy pecans. This easy-to-make dessert is perfect for snacking or sharing, featuring a buttery brown sugar toffee base on top of crispy saltine crackers, finished with gooey chocolate and toasted nuts.

Ingredients

Toffee Base

  • 1 sleeve saltine crackers (about 35 crackers)
  • 1 cup butter
  • 1 cup light brown sugar (packed)

Toppings

  • 2 cups semi-sweet chocolate chips
  • ¾ cup chopped pecans

Instructions

  1. Preheat and Prepare Baking Sheet: Preheat your oven to 400℉. Line a rimmed baking sheet with parchment paper to prevent sticking and make cleanup easier.
  2. Arrange Crackers: Lay out the saltine crackers in a single layer across the prepared baking sheet ensuring they cover the entire surface without overlapping.
  3. Make Toffee Mixture: In a medium saucepan over medium heat, combine the butter and packed light brown sugar. Stir continuously until the mixture is melted and smooth.
  4. Boil Toffee: Increase the heat to medium-high and bring the mixture to a boil. Once boiling, stop stirring and let it boil for 3 minutes to develop the toffee’s rich flavor and thickness.
  5. Pour and Spread Toffee: Carefully pour the hot toffee mixture evenly over the layer of saltine crackers and use a spatula to spread it thoroughly.
  6. Bake Toffee Cracker Base: Place the baking sheet in the oven and bake for 5 minutes to set the toffee and blend flavors.
  7. Add Chocolate Chips: Remove the baking sheet from the oven and immediately sprinkle the semi-sweet chocolate chips over the hot toffee layer. Let them sit for 5 minutes to soften and melt.
  8. Spread Chocolate and Add Pecans: After the chocolate has melted, spread it evenly over the toffee with a spatula, then sprinkle the chopped pecans evenly on top for crunch and flavor.
  9. Cool and Set: Let the toffee cool at room temperature for 30 minutes to firm up, then transfer it to the refrigerator to chill for 2 to 3 hours until fully set and hardened.
  10. Serve: Once firm, cut the toffee into squares and enjoy this deliciously crunchy and sweet snack.

Notes

  • Use parchment paper on the baking sheet for easy removal and cleanup.
  • Be cautious when pouring the hot toffee mixture as it will be very hot and sticky.
  • Allow the chocolate chips to melt completely before spreading for a smooth, glossy finish.
  • Store leftover toffee in an airtight container at room temperature or refrigerated for longer freshness.
  • For a nut-free version, omit the pecans or substitute with seeds like sunflower or pumpkin seeds.
