Ingredients

Dough Ingredients

  • 1 tablespoon instant dry yeast
  • 1 tablespoon granulated sugar
  • 1 cup warm water (100-110℉)
  • 1 teaspoon salt
  • 2 teaspoons dried rosemary
  • 1 teaspoon dried basil
  • 1 teaspoon dried oregano
  • 6 cloves minced garlic
  • 2 to 2 1/2 cups all-purpose flour
  • 1/3 cup grated parmesan cheese

Topping

  • 2 tablespoons olive oil (for baking sheet)
  • 1 tablespoon butter (divided on loaves)

Instructions

  1. Activate yeast and combine herbs: In a large mixing bowl, combine 1 tablespoon instant dry yeast, 1 tablespoon granulated sugar, and 1 cup warm water. Stir in 1 teaspoon salt, 2 teaspoons dried rosemary, 1 teaspoon dried basil, 1 teaspoon dried oregano, and 6 cloves minced garlic to infuse flavor into the dough.
  2. Mix the dough: Add 2 cups of all-purpose flour and 1/3 cup grated parmesan cheese into the wet ingredients. Stir until a rough dough forms. Gradually add up to an additional 1/2 cup flour until the dough becomes smooth and elastic but still slightly tacky—not sticky.
  3. First rise: Transfer the dough to a lightly greased bowl. Cover with a kitchen towel or plastic wrap and allow it to rise in a warm place for about 1 hour until doubled in size, allowing the yeast to develop flavor and texture.
  4. Preheat oven and prepare baking sheet: Preheat the oven to 375°F (190°C). Drizzle 2 tablespoons of olive oil onto a baking sheet and spread evenly to prevent sticking and add flavor.
  5. Shape the loaves: Once risen, punch down the dough and divide it into two equal portions. Shape each portion into a round loaf and place them on the prepared baking sheet. Cover and let rise for another 15-20 minutes to allow final proofing.
  6. Add butter topping: Place a 1/2 tablespoon-sized piece of butter on top of each loaf to melt during baking, enriching the crust and adding a golden finish.
  7. Bake the bread: Bake the loaves in the preheated oven for 18-20 minutes until golden brown and they sound hollow when tapped on the bottom, indicating they are fully baked inside.
  8. Cool and serve: Remove the loaves from the oven and transfer to a wire rack to cool completely before slicing to preserve texture and flavor.

Notes

  • Use warm water between 100-110℉ to properly activate the yeast without killing it.
  • Adjust flour as needed; dough should be soft and slightly tacky but not sticky.
  • Make sure dough doubles in size during the first rise for optimal texture.
  • If you like, brush the loaves with additional olive oil or garlic butter after baking for extra flavor.
  • Store leftover bread in an airtight container to keep it fresh longer.
