Ingredients

Vegetables and Herbs

  • 1 large cauliflower head (about 2 ½ pounds, cut into small florets)
  • 4 cloves roasted garlic
  • ½ teaspoon finely chopped fresh rosemary
  • ½ teaspoon finely chopped fresh thyme

  • 2 tablespoons salted butter
  • ¼ cup whole milk

Instructions

  1. Boil Cauliflower: Bring a large pot of water to a boil. Add the cauliflower florets and boil for 8-10 minutes, or until tender. Once cooked, transfer the cauliflower to a colander to drain and then spread out on a dish towel. Pat the cauliflower dry to remove excess moisture.
  2. Purée in Processor: Add the boiled cauliflower to a food processor along with the butter, whole milk, roasted garlic, finely chopped rosemary, thyme, salt, and black pepper. Process for 1 minute until partially smooth, then scrape down the sides. Continue processing for another minute or until the mixture reaches a smooth, mashed potato-like texture.
  3. Serve: Transfer the mashed cauliflower to a serving dish. Optionally, drizzle with a little olive oil and garnish with fresh sprigs of rosemary or thyme before serving to enhance flavor and presentation.
