This Roasted Eggplant Dip is a creamy, smoky, and flavorful appetizer that’s easy to prepare and perfect for parties or a healthy snack. Roasting the eggplant and garlic enhances their natural sweetness and imparts a rich depth of flavor, complemented by fresh lemon juice, cumin, smoked paprika, and fresh parsley. Serve chilled or at room temperature with pita bread, crackers, or fresh vegetables.

  • 1 eggplant (1½-2 pounds)
  • 1 head garlic
  • 3-4 tablespoons olive oil
  • 1-2 tablespoons lemon juice (freshly squeezed)
  • ¼ teaspoon ground cumin
  • ¼ teaspoon smoked paprika
  • ¼ teaspoon salt
  • ¼ teaspoon pepper
  • ⅛ teaspoon red pepper flakes
  • 2 tablespoons freshly chopped parsley

Instructions

  1. Preheat Oven: Preheat your oven to 400°F (200°C) to prepare for roasting the eggplant and garlic.
  2. Prepare Eggplant: Slice the eggplant in half lengthwise and score the flesh with crosshatch marks. This allows the heat and olive oil to penetrate more evenly.
  3. Arrange for Roasting: Place the eggplant halves cut side up on a baking sheet lined with parchment paper. Drizzle 3-4 tablespoons of olive oil over the surface of the eggplant evenly.
  4. Prepare Garlic: Slice off the top of the garlic head to expose the cloves. Drizzle with olive oil, then wrap tightly in foil to keep the garlic moist while roasting.
  5. Roast: Place both the eggplant and the wrapped garlic on the baking sheet. Roast in the preheated oven for about 40-45 minutes, or until the eggplant flesh is very tender and the garlic is soft.
  6. Scoop Eggplant Flesh: Remove from the oven and let cool slightly. Scoop out the roasted eggplant flesh along with any juices into a food processor.
  7. Add Roasted Garlic: Squeeze the roasted garlic cloves from their skins and add to the food processor. Blend until smooth. If the mixture is too thick, gradually add a bit more olive oil to reach desired consistency.
  8. Season: Add freshly squeezed lemon juice, ground cumin, smoked paprika, salt, pepper, and red pepper flakes. Blend again to mix fully. Taste and adjust seasonings as needed.
  9. Add Parsley: Add the chopped fresh parsley and pulse 3-4 times to distribute it throughout the dip, keeping small bits visible for texture.
  10. Chill and Serve: Transfer the dip to a bowl, cover, and refrigerate for at least 30 minutes to meld flavors. Before serving, stir well and garnish with a sprinkle of paprika and fresh parsley.

  • For a smokier flavor, you can char the eggplant directly on a gas stove or grill before roasting.
  • The dip can be stored in an airtight container in the refrigerator for up to 3 days.
  • If you prefer a milder dip, reduce or omit the red pepper flakes.
