Ingredients

  • 1 cup granulated sugar
  • 4 eggs
  • 1 1/2 teaspoons vanilla flavoring
  • 1/2 teaspoon salt

Instructions

  1. Preheat and prepare pan: Preheat your oven to 350 degrees F. Lightly grease a 9×13-inch baking dish to prevent sticking.
  2. Make crust mixture: In a food processor, combine the flour, baking soda, and salt. Pulse to sift together, then add the cubed butter. Process until the mixture becomes sandy and crumbly, resembling coarse crumbs.
  3. Form crust: Spoon about two-thirds of the crumb mixture into the prepared baking dish. Press firmly and evenly to create a solid crust layer across the bottom.
  4. Prepare filling: In a medium bowl, combine the ricotta cheese, granulated sugar, eggs, vanilla flavoring, and salt. Mix thoroughly until the filling is completely smooth and well blended.
  5. Assemble bars: Pour the ricotta filling over the crust in the baking dish. Then, evenly sprinkle the remaining crumb mixture over the top of the filling.
