  • 350 grams / 12 oz. uncooked rice stir fry noodles

Chicken and Sauce

  • 1-2 tablespoons cooking oil
  • 2 teaspoons minced garlic
  • 1/4 cup soy sauce
  • 1/4 cup peanut butter
  • 1/4 cup sugar-free maple syrup
  • 1 teaspoon sriracha sauce
  • 1/2 cup water
  • 1 tablespoon cornstarch (or cornflour)

  • Sesame seeds (optional)
  • Chopped peanuts (optional)

Instructions

  1. Cook the noodles: Prepare 350 grams / 12 oz. rice stir fry noodles according to the package directions. Drain and set aside.
  2. Cook the chicken and garlic: Heat a large sauté pan over medium-high heat. Once hot, add 1-2 tablespoons cooking oil and 2 teaspoons minced garlic. Cook the garlic until fragrant, about 15-30 seconds. Add the thinly sliced chicken breasts and cook until golden brown and no pink remains, about 4-5 minutes.
  3. Make the peanut sauce: Reduce heat to medium-low. Add 1/4 cup soy sauce, 1/4 cup peanut butter, 1/4 cup sugar-free maple syrup, and 1 teaspoon sriracha sauce to the pan. Stir continuously until the peanut butter is fully incorporated and the sauce is smooth.
  4. Thicken the sauce: In a small bowl, mix 1/2 cup water with 1 tablespoon cornstarch until smooth. Pour this mixture into the pan with the sauce and simmer gently until it thickens slightly and becomes creamy. Remove from heat.
  5. Combine noodles and sauce: Add the cooked, drained noodles to the pan and toss well to coat evenly with the peanut sauce. Heat through if necessary.
