Ingredients

Chicken and Meat

  • 4 skinless chicken thighs
  • 4 skinless chicken drumsticks

Vegetables and Aromatics

  • 10 oz red onions (about 300 g), halved and thinly sliced
  • 5 large garlic cloves, thinly sliced
  • 1 lb rhubarb (about 450 g), cleaned, peeled, and chopped into small pieces
  • 1 can chopped tomatoes (400 g / 14 oz)

Liquids and Seasonings

  • 2 tablespoons olive oil
  • 1 to 2 tablespoons roughly ground black pepper
  • 2 teaspoons turmeric powder
  • 5 tablespoons honey (add more to taste)
  • 3 tablespoons fresh lime juice
  • 3 cups chicken stock (approximately 730 ml)
  • Fine sea salt, to taste

Instructions

  1. Prepare Ingredients: Halve the red onions and slice them thinly. Thinly slice the garlic cloves as well. Skin the chicken pieces and separate the chicken legs at the joint if necessary. Clean, peel, and chop the rhubarb into small pieces.
  2. Sear the Chicken: Heat the olive oil in a thick-bottomed or nonstick pot over medium heat. Add the chicken pieces and sear until they are golden brown on all sides, about 5 minutes per side. Avoid moving the chicken during the initial 5 minutes so it adheres and browns properly. Once browned, remove the chicken and set aside.
  3. Cook the Vegetables: In the same pot, add the sliced onions and garlic without additional oil. Fry for about 5 minutes, stirring often to prevent sticking. Add a little splash of water if onions begin to stick to the pan. Stir in the ground black pepper and turmeric, cooking briefly while stirring continuously.
  4. Add Tomatoes: Pour in the canned chopped tomatoes and cook for 2 to 3 minutes, allowing the flavors to meld.
  5. Simmer the Rhubarb Chicken: Add honey, fresh lime juice, and chopped rhubarb to the pot. Return the seared chicken pieces to the pan, then pour in the chicken stock. Increase heat to bring the mixture to a boil, then reduce to medium-low heat and simmer uncovered for approximately 1 hour and 15 minutes. Stir occasionally to prevent sticking and promote even cooking.
  6. Season and Adjust: After simmering, season the dish with fine sea salt to taste. Adjust sweetness or acidity by adding extra honey or lime juice if desired. Serve warm.
