Ingredients

Quinoa Mixture

  • 1 cup cooked quinoa
  • 2 eggs
  • ½ teaspoon oregano
  • ½ teaspoon garlic powder

  • ½ cup mozzarella cheese
  • ¼ cup red onion, finely minced

Coating

  • 1 cup panko breadcrumbs (gluten-free if desired)

For Frying

  • 4 tablespoons avocado oil, divided

Instructions

  1. Mix Ingredients: In a medium bowl, combine the cooked quinoa, eggs, oregano, garlic powder, salt, and black pepper. Stir well to evenly distribute the seasonings. Then fold in the mozzarella cheese and finely minced red onions until well incorporated.
  2. Add Breadcrumbs: Stir in the panko breadcrumbs and let the mixture sit for a few minutes. This resting period allows the breadcrumbs to absorb moisture, helping the patties hold together better during cooking.
  3. Form Patties: Wet your hands with water to prevent sticking, then use a ¼ cup measuring scoop to portion the mixture. Shape each portion into a round patty, aiming to make about 10 patties in total.
  4. Heat Oil and Fry Patties: Heat 2 tablespoons of avocado oil in a large non-stick skillet over medium heat. Carefully place half of the patties into the pan and cook each side for 3 to 4 minutes until golden brown and crispy. Remove cooked patties to a plate and repeat the frying process with the remaining oil and patties.
