This Quick Air Fryer Mushrooms recipe offers a speedy and flavorful way to prepare baby bella or cremini mushrooms. Tossed in olive oil, garlic powder, and seasoned generously, these mushrooms are air fried to a tender, golden finish with optional fresh herbs and a splash of balsamic vinegar for added depth. Perfect as a vegan side dish or a savory snack, this recipe takes just 22 minutes and yields two servings.

Ingredients

Mushrooms and Seasonings

  • 8 ounces baby bella or cremini mushrooms, brushed and halved
  • 1 tablespoon olive or avocado oil (or substitute with olive/avocado oil spray)
  • Salt, to taste
  • Freshly ground black pepper, to taste
  • 1/4 teaspoon garlic powder

Optional Herbs and Flavor Enhancers

  • 1 1/2 tablespoons fresh thyme or rosemary leaves (optional)
  • 2 teaspoons balsamic vinegar (aged or commercial-grade)

Instructions

  1. Prepare the Mushrooms: Transfer the brushed and halved mushrooms to a large mixing bowl. Drizzle with olive or avocado oil, or spray generously with a corresponding oil spray. Season generously with salt, freshly ground black pepper, and garlic powder. Toss thoroughly to evenly coat the mushrooms with oil and seasonings.
  2. Air Fry the Mushrooms: Place the seasoned mushrooms in the basket of the air fryer. Air fry at 400°F (200°C) for 10 to 12 minutes. Halfway through the cooking time, around 5 to 6 minutes in, shake the basket vigorously to turn and redistribute the mushrooms for even cooking. The mushrooms should become soft, gently browned, and significantly reduced in size.
  3. Add Herbs and Balsamic Vinegar: If using fresh herbs and balsamic vinegar, add them to the mushrooms about 4 minutes before the air frying completes. Give the basket a good shake to disperse the herbs and vinegar evenly. Continue cooking for the final 4 minutes to allow the flavors to meld.
  4. Serve or Store: Once cooked, serve the mushrooms immediately as a flavorful side dish or savory snack. Alternatively, store them in an airtight container in the refrigerator for up to four days to enjoy later.

Notes

  • You can use an oil spray instead of drizzling oil for a lighter result and more even coating.
  • Fresh herbs like thyme or rosemary add aromatic complexity but are optional.
  • Balsamic vinegar brightens the mushrooms with a subtle tang and depth of flavor.
  • Shaking the basket halfway through cooking ensures even browning and prevents mushrooms from steaming.
  • These mushrooms pair excellently with grilled dishes, salads, or can be added to pasta and grain bowls.
  • Store leftovers in an airtight container for up to 4 days and reheat gently to retain texture.
