Fruit Filling

  • 3 cups apples, peeled and sliced into 1/2” pieces (honey crisp recommended)
  • 3 cups pears, peeled and sliced into 1/2” pieces (red Anjou recommended)
  • 1/4 cup maple sugar (or coconut sugar)
  • 1/2 tsp ground cinnamon
  • 1/4 tsp allspice (or cloves)
  • 1/4 tsp ginger
  • 1 Tbsp tapioca flour (or arrowroot)
  • 1/4 tsp sea salt

Cobbler Topping

  • 1 1/4 cups blanched almond flour
  • 1/4 cup tapioca flour (or arrowroot)
  • 1/4 cup maple sugar (or coconut sugar)
  • 1/4 tsp fine sea salt
  • 1/2 tsp ground cinnamon
  • 1 1/2 tsp aluminum-free baking powder (or homemade paleo baking powder)
  • 1/4 cup refined coconut oil, melted and cooled to almost room temperature
  • 3 tbsp unsweetened almond milk (or preferred dairy-free milk)

Instructions

  1. Preheat Oven: Preheat your oven to 350° F. Lightly spray a 9-inch pie dish or baking dish with avocado oil spray to prevent sticking.
  2. Prepare Fruit Mixture: In a large bowl, combine the peeled and sliced apples and pears with maple sugar, ground cinnamon, allspice, ginger, tapioca flour, and sea salt. Toss them together thoroughly and set aside while making the topping.
  3. Make Cobbler Topping: In a separate bowl, stir together the almond flour, tapioca flour, sugar, sea salt, cinnamon, and baking powder until well combined. Add the melted coconut oil and unsweetened almond milk, stirring until a thick batter forms.
  4. Assemble and Bake: Transfer the fruit mixture into the prepared baking dish. Spoon the cobbler batter evenly over the top of the fruit. Place the dish in the preheated oven and bake for 35 minutes, or until the topping turns golden brown and the fruit is tender. To check doneness, insert a toothpick into the topping; it should come out clean or with minimal crumbs. If the topping browns too quickly, tent with aluminum foil to prevent burning.
  5. Cool and Serve: Remove the cobbler from the oven and allow it to cool at room temperature for 20 to 30 minutes. This resting time helps the cobbler set properly.
