Ingredients

Vegetables and Fresh Ingredients

  • 3 cloves of garlic, peeled and finely chopped
  • 1 medium carrot, cut into thin matchsticks
  • 1 cup cherry tomatoes
  • 1 1-to-2-inch knob of fresh ginger root, peeled and grated
  • 4 to 6 sprigs fresh cilantro, finely chopped
  • Juice of 1 lime

Spices and Dry Ingredients

  • 1 tsp curry powder
  • 1 tsp turmeric powder
  • 1 tsp ground cumin
  • 1 tsp paprika
  • 1 tsp coriander seeds
  • 1/8 to 1/4 tsp ground cinnamon
  • 2 Tbsp tomato paste

Oils, Sauces, and Liquids

  • 1 Tbsp coconut oil
  • 2 tsp soy sauce (or tamari or coconut aminos)
  • 1 cup light coconut milk (canned)
  • ¾ cup water (plus more as needed)

  • ⅓ cup peanut butter (preferably natural, no added sugar or salt)
  • Salt and pepper to taste

Instructions

  1. Prepare the aromatics and vegetables: Peel and finely chop the garlic, and cut the carrot into thin matchsticks using a knife or mandoline. This ensures even cooking and a good texture in the curry.
  2. Heat the base flavors: Warm the coconut oil in a large, heavy-based saucepan over medium heat. Grate the ginger directly into the pan, add the chopped garlic, and sauté them together for 1 minute until fragrant.
  3. Toast the spices: Add the curry powder, turmeric, cumin, paprika, coriander seeds, and ground cinnamon to the pan. Toast the spices for 30 to 45 seconds, stirring constantly until you can smell their aroma, which unlocks their full flavor.
  4. Add vegetables and tomato base: Stir in the carrot matchsticks and cherry tomatoes, then add the tomato paste and soy sauce (or alternatives). Mix everything well to combine the flavors evenly.
  5. Add liquid ingredients: Pour in the light coconut milk, then add the peanut butter and about ¾ cup (180 ml) of water. Stir the mixture thoroughly until it becomes smooth and creamy, with a luscious consistency.
  6. Simmer the curry: Cover the pan and let the curry simmer on low heat for 10 minutes. Check the consistency and add more water if necessary to achieve your preferred thickness.
  7. Add fresh herbs: Finely chop the cilantro and stir it into the warm curry, allowing its fresh flavor to infuse the dish.
  8. Season and finish: Squeeze in the juice of one lime, then season the curry with salt and pepper to taste. Serve immediately, ideally accompanied by crispy butter beans or your preferred side.
