Ingredients

Pea Topping

  • 1 cup frozen peas
  • Small handful of pea shoots (optional)
  • 1/4 cup grated Parmesan cheese
  • 3 tbsp olive oil
  • 1 tsp lemon juice
  • 1/2 clove garlic
  • Salt and pepper to taste

Bruschetta

  • 6 slices ciabatta bread
  • 2 tbsp olive oil
  • 1/2 clove garlic

Garnish

  • Pea shoots
  • Fresh Parmesan cheese
  • Lemon zest
  • Black pepper
  • Extra virgin olive oil

Instructions

  1. Prepare the Pea Topping: Place the frozen peas, pea shoots, grated parmesan cheese, olive oil, lemon juice, half a clove of garlic, salt, and pepper into a food processor. Use the pulse button to chop and combine the ingredients until you achieve a rough paste. Set this mixture aside while you prepare the toast.
  2. Preheat the Broiler or Grill: Set your oven broiler or grill to high to prepare for toasting the ciabatta slices.
  3. Prepare the Bread: Drizzle each slice of ciabatta bread with olive oil evenly to ensure a crispy and flavorful toast.
  4. Toast the Ciabatta: Place the bread slices under the broiler or grill and toast for 2-3 minutes on each side, until the bread is crisp and golden brown.
  5. Rub with Garlic: While the toast is still warm, lightly rub each slice with the remaining half clove of garlic. This will infuse the bread with a subtle garlic aroma and flavor.
  6. Assemble the Bruschetta: Spread the prepared pea topping generously over each toasted slice of ciabatta.
  7. Add the Garnishes: Top each bruschetta with extra parmesan cheese, a sprinkle of lemon zest, additional pea shoots, and a light drizzle of extra virgin olive oil.
  8. Finish and Serve: Garnish with a pinch of freshly ground black pepper and serve immediately for best flavor and texture.

Notes

  • Frozen peas can be fresh or thawed before processing for best texture.
  • Pea shoots are optional but add a fresh, crunchy texture and visual appeal.
  • You can adjust the amount of garlic and lemon juice according to your taste preferences.
  • Use a good-quality extra virgin olive oil for drizzling to enhance flavor.
  • To make this dish vegan, substitute Parmesan cheese with a plant-based alternative.
