Ingredients

Cake Batter

  • 200 g unsalted butter (room temperature, plus extra for greasing)
  • 250 g caster sugar
  • 3 large eggs (room temperature, beaten)
  • 250 g self-rising flour
  • 1/4 tsp salt
  • 160 ml sour cream (room temperature)

Passion Fruit Syrup

  • 3 medium passion fruit
  • 2 medium limes (juice only)
  • 60 g caster sugar

Instructions

  1. Preheat and Prepare Tin: Preheat the oven to 180°C (160°C fan). Grease a baking tin with butter and line it with baking parchment, leaving plenty overhanging for easy cake removal.
  2. Make the Batter: In a large bowl with an electric mixer, beat the butter and sugar together until the mixture is creamy, pale, and fluffy (about 3-4 minutes). Gradually add the beaten eggs, about a tablespoon at a time, mixing thoroughly after each addition. Scrape the bowl’s bottom and sides as needed to incorporate all ingredients evenly.
  3. Fold in Dry Ingredients and Cream: Sift half of the self-rising flour and the salt into the batter and gently fold with a spatula until just combined. Add the sour cream and fold again until fully incorporated. Sift in the remaining flour and fold gently until the batter is smooth and soft.
  4. Bake the Cake: Transfer the batter into the prepared baking tin, smoothing the top with a spatula. Place it on the middle rack of the oven and bake for about 1 hour, or until a toothpick inserted into the center comes out clean. Allow the cake to cool in the tin.
  5. Prepare Passion Fruit Juice: Spoon out the pulp from the passion fruits into a sieve and press with a spatula to extract the juice. Reserve 2-3 teaspoons of passion fruit seeds, rinse them under water, and set aside. Juice the limes and combine the lime juice with the passion fruit juice.
  6. Soak Cake with Syrup: Use a long skewer or cake tester to poke holes all over the cooled cake. Brush half of the passion fruit and lime juice mixture evenly over the cake’s surface. Mix the remaining juice with the reserved passion fruit seeds and caster sugar, then pour this syrup over the cake. Allow it to set for a few minutes to soak in before serving.
