Ingredients

Chicken

  • 4-6 boneless skinless chicken thighs (or breasts)
  • 2 teaspoons Italian seasoning (divided)
  • 4 tablespoons oil
  • ½ teaspoon salt
  • ¼ teaspoon black pepper

Roasted Red Pepper Sauce

  • ⅔ cup chopped roasted red peppers
  • 1 tablespoon minced garlic
  • 1 cup heavy cream

Garnish (Optional)

  • 2 tablespoons crumbled feta cheese
  • thinly sliced fresh basil

Instructions

  1. Prepare the Roasted Red Pepper Sauce: Combine the chopped roasted red peppers, 1 teaspoon of Italian seasoning, oil, minced garlic, salt, and black pepper in a food processor or blender. Pulse the mixture until it becomes smooth and well combined.
  2. Cook the Chicken: Grease a large skillet over medium heat. Season the chicken with the remaining 1 teaspoon of Italian seasoning. Place the chicken in the skillet and cook for 6-8 minutes on each side, or until the chicken is cooked through and has a lightly browned exterior. Remove the chicken from the skillet, transfer to a plate, and cover to keep warm.
  3. Make the Sauce in the Skillet: Pour the blended red pepper mixture into the same skillet and stir over medium heat for 2-3 minutes until heated through. Add the heavy cream, stirring constantly until the sauce thickens and becomes creamy.
  4. Combine Chicken and Sauce: Return the cooked chicken to the skillet and toss it in the sauce to evenly coat each piece. Cook for an additional minute to allow flavors to meld.
  5. Garnish and Serve: Sprinkle the dish with crumbled feta cheese and fresh basil slices for added flavor and an attractive presentation. Serve immediately.

Notes

  • You can use roasted red peppers from a jar for convenience, or roast fresh red peppers until charred for a more intense flavor.
  • Chicken thighs provide a juicier option, but chicken breasts can be used if preferred.
  • Adjust seasoning and cream quantity according to your taste preference and desired sauce consistency.
  • For a lighter option, substitute heavy cream with half-and-half, but the sauce may be less thick.
  • This recipe is easily doubled or halved to suit serving needs.
