  • Red onion (thinly sliced, quantity as desired)

Instructions

  1. Preheat Oven and Prepare Baking Sheets: Preheat your oven to 400°F (204°C). Line two pizza stones, round pans, or large baking sheets with unbleached parchment paper and spray them with cooking spray to prevent sticking.
  2. Make the Dough: In a food processor, add the cubed cheese and process on high speed until fine crumbs form. Add the oats, salt, garlic powder, dried herbs, and eggs, then process on high until a thick dough forms, suitable for shaping.
  3. Shape the Crusts: Divide the dough evenly between the two prepared baking sheets, placing it in dollops. Using wet hands to prevent sticking, flatten the dough and shape each into a round, thin crust approximately 1/4 inch thick. Note that the dough will not rise during baking.
  4. Bake the Crusts: Bake both crusts in the oven for 25 minutes. Position both trays in the oven simultaneously, then, if needed, bake the top tray a few extra minutes on the bottom rack for even cooking. Remove from the oven once crusts are firm and slightly golden.
  5. Cook the BBQ Chicken: While the crusts bake, heat a large non-stick ceramic skillet over medium heat. Add the cut chicken pieces and cook for about 10 minutes, stirring occasionally, until cooked through. Add your desired amount of BBQ sauce, stir to coat the chicken well, then turn off the heat.
  6. Assemble the Pizzas: Spread a layer of BBQ sauce over each baked oatmeal crust. Layer with your favorite sliced cheese, the cooked BBQ chicken, thinly sliced red onions, and chopped cilantro for freshness.
  7. Final Bake: Increase the oven temperature to 450°F (232°C). Bake the assembled pizzas until the cheese melts and bubbles, approximately 5-7 minutes.
