Ingredients

Dry Ingredients

  • 1 ½ cups all-purpose flour
  • 1 teaspoon baking soda
  • ½ teaspoon baking powder
  • ½ teaspoon cinnamon
  • ½ teaspoon salt

Wet Ingredients

  • 2 large eggs
  • ½ cup sugar
  • ½ cup brown sugar
  • ½ cup avocado or canola oil (or another flavorless oil)
  • 2 teaspoons vanilla bean paste
  • 1 cup mashed bananas (about 2 large or 3 medium bananas)

Filling

  • 1 cup Nutella

Instructions

  1. Preheat and Prepare: Preheat your oven to 375°F (190°C) and line a muffin tin with paper liners to ensure easy removal and less mess.
  2. Mix Dry Ingredients: In a bowl, whisk together the all-purpose flour, baking soda, baking powder, salt, and cinnamon. This ensures even distribution of the leavening agents and spices.
  3. Combine Wet Ingredients: In a separate large bowl, whisk the eggs with both sugars until the mixture is blended and slightly frothy. Add the oil and vanilla bean paste, whisking well to combine. Next, fold in the mashed bananas to the wet mixture.
  4. Combine Wet and Dry Mixtures: Gently stir the dry ingredients into the wet ingredients using a spoon. Mix until just combined to prevent overmixing which can make muffins tough.
  5. Fill Muffin Tins with Batter: Spoon the batter into the lined muffin cups until they are about ¾ full, leaving room for the Nutella and rising during baking.
  6. Add Nutella Filling: Add approximately one tablespoon of Nutella into the center of each muffin cup on top of the batter. You may swirl it lightly into the batter or push it down slightly—it will naturally settle as the muffins bake.
  7. Bake: Place the muffin tin in the preheated oven and bake for 18 to 20 minutes or until the muffins are set in the center when gently touched. The Nutella inside should remain gooey and hot.
  8. Cool and Serve: Allow the muffins to cool slightly in the pan before serving. For extra indulgence, serve with additional Nutella spread on top.

Notes

  • Use ripe bananas for the best sweetness and moisture.
  • Do not overmix the batter to keep muffins tender and fluffy.
  • If desired, substitute Nutella with other chocolate hazelnut spreads for dietary preferences.
  • Ensure the oven is fully preheated for optimal baking results.
  • Allow muffins to cool slightly before removing from the tin to avoid breakage.
