Ingredients

Crust

  • 11 ounces frosted animal cookies ( bags) plus extra for topping
  • ½ cup unsalted butter, melted (1 stick)
  • 1 tablespoon granulated sugar

Filling

  • 16 ounces cream cheese, room temperature (2 bricks)
  • 1 cup powdered sugar
  • 1 teaspoon vanilla bean paste
  • 1 cup pink candy melts
  • Pink food coloring (optional)
  • Rainbow sprinkles (optional, for topping)

Instructions

  1. Prepare the Pan: Line an 8×8-inch baking pan with parchment paper, ensuring the ends overlap by about an inch on the sides to allow easy lifting of the cheesecake once set.
  2. Crush the Cookies: Using a food processor or placing the frosted animal cookies in a large Ziplock bag, crush them until they become a fine powder.
  3. Make the Crust Mixture: Stir together the crushed cookies with melted butter and granulated sugar until the mixture resembles a dough.
  4. Form the Crust: Press the cookie mixture evenly into the bottom of the prepared pan, ensuring it reaches every corner. Place the crust in the refrigerator to set while you prepare the filling.
  5. Beat the Filling Base: In the bowl of a stand mixer fitted with a paddle attachment, beat the cream cheese, powdered sugar, and vanilla bean paste until smooth and creamy.
  6. Melt the Candy Melts: In a small microwave-safe bowl, melt the pink candy melts until smooth. Be careful to heat in short intervals to avoid burning.
