Ingredients

For the Burgers

For the Mushrooms

  • 12 tablespoons olive oil
  • 8 oz. sliced Bella mushrooms
  • Salt, to taste

Instructions

  1. Caramelize onions: Melt 2 tablespoons of unsalted butter in a medium cast iron skillet over medium heat. Add the sliced onion along with salt and pepper. Cook, stirring frequently and adding splashes of water as needed to prevent burning, until the onions turn golden brown and caramelized, about 30 minutes (longer if cooking a larger quantity).
  2. Brown mushrooms: In the same skillet or a separate one, heat 1 to 2 tablespoons of olive oil over medium-high heat. Add the sliced Bella mushrooms and cook until browned and tender, approximately 10 minutes. Season with salt and pepper to taste.
  3. Prepare burger patties: Divide the ground beef into four equal portions and form each into a patty, making a slight indentation in the center to prevent puffing during cooking. Season both sides with kosher salt, freshly ground black pepper, onion powder, and garlic powder.
  4. Preheat grill: Light an outdoor grill to medium-high heat. Add wood chips if desired to infuse a smoky flavor.
