Ingredients

Stew Ingredients

  • 1/4 cup olive oil
  • 1 onion, finely chopped
  • 4-5 crushed garlic cloves
  • 2 tablespoons tomato paste
  • 1/4 cup chopped parsley
  • 1/4 cup chopped cilantro (coriander)
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon cumin powder
  • 1/4 teaspoon paprika powder
  • 1/4 teaspoon turmeric powder
  • 1 can diced tomatoes with their juice (400 g / 14.5 oz)
  • 1/2 cup water
  • 2 cans white cannellini beans, drained and rinsed (400 g / 14.5 oz each)

Instructions

  1. Heat olive oil and sauté onion: Add the olive oil to a medium sized saucepan set over medium-high heat. Add the finely diced onion and sauté for a few minutes until softened and fragrant.
  2. Add garlic: Add the crushed garlic cloves and sauté for another minute until aromatic.
  3. Add tomato paste and herbs: Stir in the tomato paste and cook for 30 seconds. Then add chopped parsley, chopped cilantro, salt, black pepper, cumin powder, paprika powder, and turmeric powder, mixing well.
  4. Add tomatoes and simmer: Pour in the can of diced tomatoes along with their juice and add 1/2 cup water. Bring the mixture to a boil, then reduce the heat to low, cover, and simmer for 10 minutes to develop flavors.
  5. Add beans and continue simmering: Gently fold in the drained and rinsed white cannellini beans. Simmer uncovered for an additional 10 minutes, allowing the beans to absorb the spices and thicken the stew.
  6. Serve: Remove from heat and enjoy warm or at room temperature. Serve with pita or naan bread for dipping into the flavorful stew.

Notes

  • Use canned beans for convenience, but rinsing well is important to reduce excess sodium.
  • You can substitute fresh tomatoes if preferred; adjust cooking time accordingly.
  • This dish can be made ahead and flavors develop even more when left to rest.
  • For a spicier version, add a pinch of cayenne pepper or chili flakes.
  • Garnish with extra fresh herbs for an added burst of freshness.
