Ingredients

Chicken Marinade

  • ¼ cup oil of choice
  • ¼ cup Greek yogurt
  • ¼ cup cilantro, minced
  • 4 cloves garlic, finely minced or crushed
  • 2 tablespoons tomato paste
  • 1 teaspoon cumin
  • 1 teaspoon chili powder or smoked paprika
  • 1 teaspoon coriander powder
  • 1 teaspoon garlic powder
  • 1 teaspoon black pepper
  • 1 teaspoon salt (or to taste)
  • Juice of ½ lemon

  • 4 Yukon gold potatoes, peeled and cut into quarters, wedges, or slices

Instructions

  2. Make the Marinade: In a large mixing bowl, combine the oil, Greek yogurt, minced cilantro, lemon juice, tomato paste, garlic, and all the spices—cumin, chili powder or smoked paprika, coriander powder, garlic powder, black pepper, and salt. Mix well until you have a smooth, consistent marinade.
  3. Marinate the Chicken: Add the chicken pieces to the bowl with the marinade. Using your hands or a spoon, thoroughly rub the marinade all over the chicken, making sure to work some under the skin for maximum flavor infusion.
