Melopita is a traditional Greek crustless honey and cheese pie that combines creamy ricotta cheese with the warm sweetness of honey and cinnamon.   • 600 grams fresh ricotta cheese
  • 100 ml honey
  • 3 eggs
  • 1 tablespoon corn starch (corn flour)
  • 1 tablespoon vanilla bean paste
  • 60 ml honey (for drizzling)
  • 1 tablespoon ground cinnamon (for dusting)

Instructions

  1. Preheat and Prepare Pan: Preheat your oven to 180°C (356°F) and grease an 8-inch (20cm) springform baking pan thoroughly to prevent sticking.
  2. Mix Ingredients: In a large bowl, whisk together the ricotta cheese, 100 ml honey, eggs, corn starch, and vanilla bean paste until the mixture is smooth and free of lumps, ensuring a uniform batter.
  3. Pour and Bake: Pour the smooth batter into the prepared springform pan and bake in the preheated oven for 45 to 50 minutes. The pie is done when the top is nicely browned and the center no longer wobbles when gently shaken.
  4. Cool in Pan: Remove the pan from the oven and allow the Melopita to cool in the pan for about 5 minutes to set further.
  5. Cool Completely and Garnish: Carefully remove the springform ring and let the pie cool completely on a rack. Once cool, drizzle the top with an additional ¼ cup (about 60 ml) of honey and dust with ground cinnamon before serving to enhance flavor and presentation.
