A refreshing and flavorful marinated white bean salad featuring tender white beans mixed with a vibrant blend of fresh herbs, roasted red peppers, shallots, and a zesty lemon dressing. Perfect as a light appetizer or a nutritious side dish, this dish benefits from a relaxing marination that enhances the flavors and creates a delightful Mediterranean-inspired dish.

Ingredients

Beans and Vegetables

  • 2 (15-ounce cans) white beans, drained and rinsed
  • 2 roasted red peppers, finely diced
  • ⅓ cup finely diced shallot
  • 2 garlic cloves, minced

Herbs

  • ½ cup chopped fresh herbs (parsley, cilantro, basil, dill, tarragon, mint, or a combination)

Dressing

  • ½ cup extra-virgin olive oil
  • 1 lemon, zested and juiced (about 3 tablespoons juice and 1 teaspoon zest)
  • ½ teaspoon kosher salt
  • ¼ teaspoon red pepper flakes
  • Ground black pepper, to taste

Instructions

  1. Mix all ingredients: In a large mixing bowl, combine the drained and rinsed white beans with the chopped fresh herbs, finely diced roasted red peppers, shallot, minced garlic, extra-virgin olive oil, lemon zest and juice, kosher salt, red pepper flakes, and ground black pepper. Stir gently to blend all flavors evenly.
  2. Marinate the mixture: Cover the bowl with plastic wrap or a lid and refrigerate for at least 2 hours, preferably overnight, to allow the flavors to meld and the beans to soak up the marinade. Before serving, give the salad a good stir. Store any leftovers in a sealed container in the refrigerator.

Notes

  • For best flavor, marinate the beans overnight.
  • You can vary the herbs based on preference or what’s available.
  • Use low-sodium beans or rinse canned beans thoroughly to reduce salt.
  • This dish can be served chilled or at room temperature.
  • Pairs well with grilled meats, crusty bread, or as part of a mezze platter.
