Ingredients

Sweet Potatoes

  • 4 pounds sweet potatoes (medium/large)

Whipped Mixture

  • 4 tbsp unsalted butter, room temperature
  • 1/2 cup mascarpone cheese (or cream cheese)
  • 1/3 cup maple syrup
  • 1/4 tsp ground cinnamon (optional)
  • Kosher salt, to taste

Instructions

  1. Preheat and Roast: Preheat the oven to 375°F (190°C). Poke the sweet potatoes several times with a fork or paring knife to allow steam to escape during cooking. Place them on a parchment-lined baking tray and roast until tender and a knife inserted into the thickest part meets no resistance, about 1 hour. Remove from oven and let cool until manageable.
  2. Peel and Prepare: Once cool enough to handle, peel the sweet potatoes and discard the skins. Place the flesh into the base of a food processor.
  3. Whip the Mixture: Add mascarpone cheese, cinnamon (if using), maple syrup, a generous pinch of kosher salt, and unsalted butter to the food processor. Pulse the ingredients until smooth and creamy. Alternatively, use a handheld mixer or immersion blender to whip the mixture until smooth and fluffy, about 2 minutes.
  4. Season and Warm: Taste the whipped sweet potatoes and adjust salt as needed. If served immediately while still hot, transfer to a serving bowl. If the mixture has cooled, warm it gently in a pot over medium-low heat, stirring frequently until heated through.
