These Mango Oatmeal Crumble Bars are a delightful treat featuring a buttery oat crust topped with a fresh, juicy mango filling and a crumbly oat topping. Ingredients

For the Crust and Crumble Topping

  • 1/2 cup unsalted butter, melted
  • 1 cup all-purpose flour
  • 3/4 cup old-fashioned whole-rolled oats
  • 1/2 cup granulated sugar
  • 1/4 cup light brown sugar, packed
  • 1/2 teaspoon salt (optional, or to taste)

For the Mango Filling

  • 2 cups coarsely chopped fresh ripe mango
  • 1/3 cup granulated sugar
  • 2 tablespoons lemon juice
  • 2 teaspoons corn starch

Instructions

  1. Preheat Oven: Preheat your oven to 350°F (175°C). Line an 8-inch square baking pan with aluminum foil and spray it with cooking spray for easy cleanup.
  2. Melt Butter: In a large microwave-safe bowl, melt the unsalted butter on high power for about 1 minute until completely liquid.
  3. Prepare Crust and Crumble Mixture: To the melted butter, add the flour, oats, granulated sugar, light brown sugar, and optional salt, stirring well to combine. The mixture will be dry and sandy with some larger crumble pieces.
  4. Set Aside Crumble Topping: Reserve one heaping cup of this mixture separately to use later as the crumble topping.
  5. Form the Crust: Transfer the remaining mixture to the prepared baking pan. Using a spatula or your fingers, press and hard-pack it evenly and smoothly to form the crust layer.
  6. Make Mango Filling: In the same mixing bowl, combine the chopped mango, granulated sugar, lemon juice, and corn starch. Toss together until evenly mixed; it’s okay if the sugar hasn’t fully dissolved as it will melt during baking.
  7. Assemble the Bars: Evenly spread the mango filling over the crust layer. Then take the reserved crumble mixture, squeeze it in your palm to create larger pieces, and sprinkle evenly over the mango layer.
  8. Bake: Bake in the preheated oven for about 50 minutes, or until the edges are set and the crumble topping is pale golden. The mango filling should be bubbling lightly at the edges. If the mangoes are very juicy, baking time may extend up to 55 minutes. Monitor the bars closely to avoid overbaking.
  9. Cool Completely: Remove the pan from the oven and place it on a wire rack. Let the bars cool completely for at least 1 hour before slicing to prevent them from falling apart.
