Ingredients

Cookie Dough

  • 150 g granulated sugar
  • 1 tablespoon lemon zest (from about 1 large lemon)
  • 50 g light brown sugar, packed
  • 113 g unsalted butter, room temperature
  • 1 large egg, room temperature
  • 1 teaspoon vanilla flavoring
  • 250 g all-purpose flour
  • ½ teaspoon baking soda
  • ½ teaspoon baking powder
  • ½ teaspoon salt
  • 1 tablespoon poppy seeds

Glaze

  • 120 g powdered sugar, sifted
  • 4 tablespoons fresh lemon juice or milk

Instructions

  1. Prepare the oven: Preheat your oven to 350°F (175°C). Line two baking sheets with parchment paper to prevent sticking and set aside.
  2. Infuse the sugar: In a large bowl, combine the granulated sugar with the lemon zest. Massage the zest into the sugar using your fingers for about 20 seconds to release the citrus oils and infuse the sugar with lemon flavor.
  3. Cream the butter and sugars: Add the light brown sugar and softened unsalted butter to the lemon sugar mixture.
