This refreshing Key Lime Pie Chia Pudding is a vibrant, creamy dessert that combines the tartness of key lime with the wholesome texture of chia seeds and a luscious cashew-lime mousse topping. Perfect for a light, dairy-free treat that feels indulgent yet healthy.

Ingredients

Chia Pudding

  • 4 tbsp chia seeds
  • 1 cup almond milk
  • Zest of 3 key limes (or 1 regular lime)
  • 2 tbsp maple syrup
  • 1/4 tsp vanilla bean paste

Lime Mousse Topping

  • 1/2 cup raw cashews, soaked in hot water for 1 hour then drained
  • 6 tbsp coconut milk (full-fat from a can)
  • 2 tbsp maple syrup
  • 1/4 cup key-lime juice (or lime juice)
  • Zest of 2 key limes (or 1 regular lime)
  • 1/2 tsp matcha powder for colour (optional)

Instructions

  1. Prepare the chia pudding: Mix the chia seeds, almond milk, key lime zest, maple syrup, and vanilla bean paste together in a bowl. Whisk vigorously for about 30 seconds until the mixture is combined and the chia seeds are evenly dispersed.
  2. Chill to thicken: Cover the bowl and place it in the refrigerator. Allow the mixture to firm up for a minimum of 2 hours or ideally overnight, so the chia seeds swell and create a pudding consistency.
  3. Make the lime mousse: Add the soaked and drained cashews to a blender or food processor along with coconut milk, maple syrup, lime juice, lime zest, and matcha powder if using. Blend on high until the mixture is completely smooth and creamy, scraping down the sides as needed.
  4. Assemble the dessert: Spoon the thickened chia pudding evenly into four small jars or serving glasses. Pour the cashew lime mousse on top of the chia pudding layer carefully.
  5. Set the pudding: Return the assembled jars to the refrigerator and chill for at least 2 hours to let the mousse set firmly before serving.

  • Soaking cashews is essential for a smooth mousse texture; use hot water for faster soaking.
