Herb and Cheese Topping

  • 30 g grated cheese (parmesan, monterey jack, cheddar, or mozzarella)

Instructions

  1. Activate Yeast: In a large bowl, mix warm water with active dry yeast and granulated sugar. Stir gently and let the mixture sit for about 5 minutes until it activates and forms a foamy layer on top.
  2. Prepare Dough Base: In the bowl of a stand mixer fitted with a dough hook, combine the bread flour, avocado oil, sea salt, and the egg. Once the yeast mixture is frothy, pour it into the flour mixture.
  3. Knead Dough: Knead on medium speed until the dough becomes smooth and shiny, about 10 minutes. If the dough feels too sticky, add flour one tablespoon at a time until the dough is tacky but manageable, taking care not to over-flour.
  4. First Rise: Transfer the dough into a lightly greased bowl. Cover with a clean cloth or plastic wrap and allow it to rise in a warm place for 45 minutes to 1.5 hours, until doubled in size.
  5. Mix Italian Seasoning: While the dough is rising, combine dried oregano, garlic powder, onion powder, and dried parsley in a small bowl. Stir well and set aside.
  6. Shape Baguettes: Preheat your oven to 375°F (191°C). Once the dough has risen, punch it down to deflate. Divide it into 6 equal portions using a scale for accuracy. On a lightly floured surface, roll each portion into a log approximately 12 inches long and 3 inches wide.
